That's an "Oeuf à la coque", basically: you
put the egg in a cute little holder and dip strips toasted bread in the
yolk. Not very elegant, but delicious.

That's what I had every day for a while, but in the UK it's just a "soft-boiled egg" eaten in an egg-cup (sometimes chicken-shaped) and with a bone, or now-a-days plastic, egg spoon. We didn't dip the toast, but ate it, buttered along with the egg. And, we, um, we didn't do the wine thing. Not sure I could have handled wine for breakfast, even in those days. Now I'm hungry ...
Glad to learn about the egg habits across the Channel! At home, we would have those soft-boiled eggs for dinner only. It takes a bit too long to eat for breakfast with the buttering, the dipping and stuff
